The consortium of the Garda DOP was created to guarantee 100% a product obtained exclusively from the olive groves of the Garda geographical areas. It is divided into three macro areas, Eastern Garda (i.e. the Verona shore of the Garda Lake), Garda Bresciano and Garda Trentino.

The certification obliges the producer to follow the highest production standards and is regulated with rather stringent standards. They range from the obligation of a certain quantity of native Casaliva cultivar greater than 55% (we are about 60%), to the processing of the olives within 48 hours (we do it within the day), to a maximum acidity of 0.5 % (we are usually around 0.2%) up to a clear and careful labeling to provide all the information to the final customer. The road to producing a DOP is certainly longer and more regulated, but we are happy to be able to take a few days more for the consumer to have the guarantee of what he brings to the table. And the DOP certification is the only one that provides it.
