The olive harvest at Fondo Brè takes place from the second half of October and lasts about a month. We have about 4,000 olive plants, mainly of the Casaliva variety between the municipalities of Garda and Torri del Benaco on the east coast of Lake Garda. Once the olives have been harvested, they are immediately taken to the mill where they are weighed and processed within the day (in order not to store the olives and compromise the quality of the oil, they are immediately processed). Once the olive oil is obtained, a sample is sent to the certification company to obtain the DOP. The certification is valid for 45 days within which it must be packaged.
